The company

Our family, which has always been proud of the farming culture that has been handed down from father to son, driven by love and passion for the land and for wine, has expanded the estate to a surface area of 70 hectares where cereals and legumes are cultivated and vines and olive trees are in full production.

Our products are created with the utmost respect for the environment and maintaining that bond that has always distinguished the relationship between wine and Umbria, the region where we were born, grew up and imagine our future. And we imagine a BIO future: from 2019 we will in fact be a 100% organic company.

Productive process

At the basis of our wine production there has always been one rule: pay the utmost attention to the land, the plant, the fruit in order to obtain a good basic product and continue the production steps in the cellar while reducing the use of sulphites to a minimum.Since 2016 this orientation has become something more: we have made our first wine without added sulphites.We started from the vineyard, pampered, partly guided and partly supported. With healthy grapes, selected through manual harvesting, ripe to the right point, we lay the foundations for a sulphite-free winemaking processDuring the winemaking and ageing stages, special care must be taken: the grapes are stored overnight in a special cold room at a temperature below zero. Fermentation then takes place for 9-10 days at a temperature strictly between 22 and 23 degrees Celsius, in order to emphasise the fruity aromas as much as possible.A wine without sulphur dioxide has a markedly different taste and is characterised by very special olfactory and taste nuances. Added sulphites have the 'contraindicated' effect of attenuating the wine's primary aromas, i.e. those of fruit; producing wine without added sulphites means maximising these aromas and finding them in the glass in a natural way
